We eat a lot of chicken – only organic – and not our own which are more like pets – even though we do eat their eggs. There are literally thousands of recipes with chicken – I will share with you our family’s favorites – most of which are quick, easy and healthy.Most of the time we remove the skin – which, although delicious – is the part with the most fat on it. With great seasonings and sauces, fresh ingredients and good organic chickens, we don’t miss it at all.
